Adventures in Bread Baking

So this afternoon, I decided I'd bake some bread. I have this recipe for "Sour Cream Loaves." It's a nice, sweet bread, but it's a little plain on its own. Last time I made it, I threw in some extra cinnamon and some raisins. This time, I thought I'd add some chopped apples to it as well. No problem, right?
Well, I bake the bread for the 45 minutes, test it with a toothpick (which comes out clean), and then take it out of the oven. I let it cool for 10 minutes before flipping it out of the loaf pan.
This is when the whole thing falls apart. Literally.
The bread was 97% done. But, the still-gooey 3% just couldn't hold it together, especially with all of the extra pieces of fruit in the batter, and globbed all over the counter. So, I scooped up the pieces, plopped them back in the pan and threw it in the oven again.
Now, it's done. And it smells great. The crumbs I've snacked on taste pretty good too.
My one remaining question? How do we eat it? I can't really slice it.. maybe Andy will just take a fork to the loaf pan.
