Empanadas or Empa No Nos :(

So I was supposed to make empanadas but i forgot that I DO NOT have a rolling pin(I know right who doesn't have a rolling pin) so they turned out not so pretty to me, but my hubby said they came out just right ( he had to say that if he knows what's good for him lol)...they weren't so smooth to me b/c i was trying to roll the dough out with my hand i didn't even take a picture of the finished product. So to save dinner i had some corn tortillas that i warmed up and just made tacos out of :(

I just used the chicken from the previous night which made these even easier to make. This would be good with leftover turkey as well.



After this step you fold the dough over and then secure egg wash and bake. I will try again soon b/c I am confident that I can get them to look like the recipe.



This is what they should have looked like :( Mine were not as neat. I will try again soon b/c it really wasn't that hard.



I had some corn tortillas for my soup so I just made tacos.



My chicken tortilla soup was sooo good though! I am very proud of how that turned out! It only took like 30 minutes. It tasted as good as any restaurant's soup that I have tasted.
