3 Meals 1 Night

Nothing at all too exciting about ziti and meat (turkey) sauce but I took a picture anyway to show you how to "remix" this dinner. So once you put your tomatoes in the blender and get that sauce going you can then take all of the leftovers and turn it into baked ziti. All you have to do is freeze this and save it for a later date. What you see in the casserole dish it what I put into the freezer so that we can have it in a week or two. Two meals in 30 minutes can't beat that!


Also...on Wednesday morning before I went to work I made a nice marinade using a mojo marinade that was out of this bottle and I just added my own seasonings to it. I poured this over a whole chicken and covered it before I left for work. Last night when I got home, while I was making this pasta dish I put my chicken in the oven for 2 1/2 hrs and then I covered it and put it in the refrigerator. When I get home tonight all I will have to do is warm the chicken in the oven, make some sides and dinner is done! If you multi task you can cook three things in one night! One for dinner, one to freeze, and dinner for the next day. Of course this is not a new idea, but it is an idea that works. Happy Cooking.
Also if you want to make your own mojo marinade here is the recipe:
INGREDIENTS:
4 cloves garlic, halved
1 jalapeno chile, seeds and ribs removed and minced
1/2 bunch cilantro, chopped
Juice of 2 limes
Juice of 1 orange
2 Tablespoons white vinegar
1 Tablespoon cumin
Salt and pepper to taste
