After my mental breakdown on Friday I went home and sulked before I talk to DH (I am learning that I am the one that has communication issues in our relationship..more on that later). He knew something was wrong but knew that in my own time I would talk about it. I showed him the numbers that I had crunched and said that I thought we could do it without getting second jobs but that we had to be diligent about it and really buckle down. He agreed and said that he didn't want me to get a second job. Saturday morning he and our friend N went and returned copper (N is an HVAC tech) and came home with $816.00!! N kindly split the money with DH so that was a huge help.

Anyway, one of my duties is to relieve the receptionist (we will call her D for the purpose of this blog) for breaks and lunch ( 2 15 minutes breaks 1 in the morning 1 in the afternoon). My work hours are 9:30-5:30 and D works 8-4.

Problem number 1 - She has been here longer than I have and when I started she was taking her lunches from 1-2. Everyone in the firm must take their lunches between 12-2. This leaves me with no choice but to take my lunch from 12-1. Yes, you read that correctly. I take my lunch 2.5 hours after I get into the office and have 5 hours to go without food after lunch. I have pointed this out to her and her response was "but I have always taken my lunch from 1-2. Hello lady get a clue!! Their are more people in this office than just you!

Problem number 2 - Her breaks, as dictated by the office manager are supposed to be between 10 and 10:15 and 3 and 3:15. She will reguarly call me at 3:30 and even 3:45 for a break. WTF! You leave in 30 minutes or 15 minutes! Her excuse? "Oh I like only having 15 minutes when I come back from my break". Well eff you D. I have a job to do too.

Problem number 3 - Another one of my duties is to set up for meeting within the firm. Sometimes they don't require anything, sometimes they need just beverages, sometimes food and beverages, ect. We have a fridge in one of the pantries that has bottled water and soda for clients only. This was a policy that was in affect before I worked here. Now keep in mind we have a soda machine in the lunch room that provides FREE soda and 2 filtered water despensers throughout the office. D will regularly send visiting attorneys or personal from the office back to get bottled water. I have asked her several times not to do so and to offer them filtered water but she continues to be a PITA.

And yes I have spoken to my office manager about all of these issues and she says she will address them but to no avail.

Rant over..thanks for reading.

Buffalo Chicken Lasagna

I've had a couple requests for the recipe so I thought I would post it. It comes highly recommended and is also a weight watchers recipe (but doesn't have to be if you don't want it to).

Buffalo Chicken Lasagna

4 oz light cream cheese
20 oz bottle reduced fat pasta sauce
1/2 cup blue cheese
3/4 cup 1% low fat cottage cheese
1 pound uncooked boneless, skinless chicken breast
1/3 cup chunky blue cheese salad dressing
7 pieces no cook lasagna noodles
hot sauce to taste
6 oz shredded fat-free mozzarella cheese

Instructions:

-cook chicken
-dice or shred chicken and put aside
-mix past sauce and hot sauce in a bowl
-in another bowl mix together cream cheese, blue cheese dressing, blue cheese crumbles and cottage cheese
-assemble lasagna in a pan starting with a layer of sauce, then noodles, then chicken, then blue cheese mix
-continue until your pan is full
-top with shredded cheese
-bake covered at 375 for 1 and 1/2 hours
-uncover and bake until top is bubbly and golden
-serves 8

*I use regular lasagna noodles and just cook them before hand.

Our very productive weekend

DH and I managed to have a very productive weekend despite the possibly pg drama (see previous blog posts).

On Friday there was a tornado warning in Manhattan so DH got stuck at a train station and stuck again on the train. So instead of him getting in around 6:30 it was much closer to 8 and yes I was sitting and waiting the entire time...good thing I had plenty of reading material. So once we got home we promptly both had a beer and the proceeded to hang out with friends and neighbors because one of our very good friends and neighbor (J) is moving back to North Dakota today. We will miss him a lot.

Saturday we slept in...it felt soo good. J had some stuff that he wanted us to have so we moved that in and reorganized the living room. Well before I could complete that I had to go to Target...I really should stay out of there...80 dollars gone like that! But I got a cute bookshelf that we have been needing for a while and did a few groceries. After getting that done I decided that after almost 2 years of living in our apt that I would "make" some curtains. Well I did and it was mostly successful! They look really good...just don't look too hard :).

Sunday I had to finish grocery shopping, go for my run (which I should have done Saturday) and make 2 buffalo chicken lasagnas. Well I didn't have to but I wanted to. We ate some, froze some, and gave some away to friends.

Then yesterday J calls us again and said "come grocery shopping in my fridge and freezer. Anything you guys don't want is being trashed". Well I'm not turning down free anything so off we went. The coming back into the apt my downstairs neighbor (A) said "I'm cleaning out my closet anything you don't want is going to goodwill". So down I went and I came back with some tank tops some sweaters some work stuff and some just casual stuff.

I love getting free things!

I want to fill you guys in on how DH reacted to the not being pg thing but this blog is getting long enough already...I'll save that for the next one.

And the answer is...

Not pg.
