contingency plans

So right now, I'm not entirely sure about our wedding date. I really want June, but I'm thinking a summer Southern California wedding is quite popular...and expensive. For the venues we're interested in, they won't allow anyone to make reservations until at least a year out. So I'm trying to get myself ready for some disappointment...and creating some contingency plans just in case...
I've started with creating another color palette still using my sage green as the main color:
Simply, black & white, and sage green

Say the roses and orchids I originally wanted is not available during the season of our wedding, or it's too expensive...then I think I'd want white flowers.

I really love the anemones!
I think with both these palettes, I can still work it into my "modern-vintage" theme.
I was hoping to use a flourish to tie in the black & white & sage theme:
