Chill Out!

Even though I have lived in the Northeast all my life and there’s no other place I’d rather be, I must admit: I really do not like the cold. I will say, there are some benefits -- my hair looks better in the winter and there are endless opportunities for cozying up with my boyfriend -- but each year, no matter how much I try to prepare myself, the cold weather always seems to sneak up on me and literally bite me in the...well, you know where. The bulky coats, the frostbite, the shivering, the black ice -- I just can’t deal! So this year, I am trying something new. I am making a list of things I will do during the winter to help make it less miserable for myself. I kicked it of by investing in a slow cooker and making this delicious chicken and dumplings recipe. It was great! Next up is a decadent dessert party because chocolate always makes me feel better. I have a few more ideas for things to do, but the cold lasts, at the very least, 5 long months so I’m definitely going to need to get a better list going. If you have any suggestions, please post them -- that way I can blog about the things I’m doing from my list over the next couple of months rather than complain about how I’m freezing.
On a similarly frigid note, I had a good time in New Mexico despite the surprisingly low temps (and even the snow flurries in the mountains). I was in absolute awe of the landscape and spent most of my time eating really good Mexican food and taking pictures -- here are a few of my favorites (pictures, not food).
