My first real kitchen disaster...

By Kristen

I don’t have much of a sweet tooth, and I try to limit my junk food intake, but the other day, I got a craving for chocolate chip cookies. Figuring it’s better to just give in to a craving (and have one or two cookies) I decided to make a batch from scratch, instead of the normal slice-and-bake variety that I try and pass off as homemade. While shopping for ingredients, I figured I’d make some substitutions to make them a little less fattening. What’s wrong with a cut corner here or there if it means I can have five cookies for the same fat and sugar content as two. I brought my ingredients home and started baking with a low-fat butter spread and sugar substitute (uh, yes, brown and granulated). I’m guessing you probably know how this turned out: really, really badly.

The cookies seriously looked like and had the consistency of sponges. When you poked them, even fresh out of the oven, they sprung back into shape and had the consistency of a sponge. It was the first thing I’ve cooked since I was about ten that I actually had to throw away (Ok, not until OH and I picked all of the hot chocolate chips out of the “cookies.”)

Worried the same thing will happen to you? Check out these baking basics.

Oh, and thank you to all of the Nesties who posted excellent dip recipes for me to serve at OH’s birthday party a two weeks ago! A special thanks to Angela, whose healthy bean dip recipe disappeared so fast I had to make a second batch during the party!
