One-pan recipes?

One thing that all Nesties have in common: we’re busy, all the time. By the time I make the mad dash home from a full day of work and deal with organizing my personal life, it's easily 8:00 or 8:30 PM and I'm only starting to think about dinner. ...And, frankly, I'm already exhausted. Take out-menu, please.

But the thing is, I love cooking. I've been trying to expand by seeking out new recipes, but the annoying part is that I always find myself using what seems like every piece of cookware I own to make them (and who wants to clean all that up?). The new challenge I have placed upon myself (and you Nesties) is to gather simple recipes and meal ideas that require a minimum amount of cookware to prepare -- ideally, just my All-Clad nonstick saute pan.

I've been scouring our recipe finder tool for some inspiration, but I'm curious to hear what shortcuts you have come up with to streamline your cooking process so you have more time to kick back and unwind. What are your favorite super-fast, super-easy, one-pan recipes?

Do you have a slow cooker?  I've been wanting to use mine more for this same reason -- I'd love to put it all in one pot and just be done!

Lor, last week I threw two pieces of flaky white fish in a pan with chopped zucchini, grape tomatoes and string beans, along with some olive oil, salt, pepper, garlic powder and lemon juice... covered it for about 15 minutes... and voila! Delish.  (Plus, it looked fancy so Jeff was very impressed.)  --Josey

kraftfoods.com has some great, easy recipes - including the super fast one pan recipes.  I love the beef bruschetta skillet!!  It's so easy to put your own spin on things like this :)

Thanks for the suggestions! I will definitely try some of these over the next week. DH will think someone kidnapped his usual wife and replaced her with a chef.

re: One-pan recipes?

I take a cookie sheet and make a one pan dinner every once in a while.  I have salmon with lemon slices, S&P on one side.  In the middle, I lay chunks of new potato drizzled with olive oil, S&P.  And on the far side, I put peeled apple slices, sprinkled with cinnamon sugar.  I cook it all for about 25 minutes on 350 degrees (depending on the thickness of the fish).  I serve up the salmon and potatoes with a green salad, and I have the baked apples with ice cream as dessert.

You'd think that the apples would take on the flavor of the other foods, or that the oil would drift over to the apples, but it actually works out GREAT for me every time.

You could also substitute pears for the apples, and put them on the salad with a little blue cheese and walnuts, or bake carrots, zucchini or asparagus (drizzled with olive oil, S&P) instead of a fruit.  ONE DISH DELISH!!

re: One-pan recipes?

I love new quick and easy recipes - as well as experimenting with "found" ingredients from the pantry and fridge.

One thing I made last night in one pot: Boiled linguine noodles. Drained. Added it back to the pot.  Added a tablespoon of margarine, dried parsley flakes, parmesan cheese, a can of tuna drained, and Ken's Steakhouse Italian dressing.  Mixed it all and served it in a pasta bowl.  It was quick, easy, and made an excellent leftover (which I ate cold like a pasta salad).

One of my all-time favorite fall comfort foods is my homemade chicken bog, which is a lowcountry Southern dish made of whole chicken, kielbasa, rice, celery, onions, and spices.  One pot is all it takes, and the recipe is fairly easy.  It's delicious on a cold day!  Let me know if you'd like for me to share.
