Easiest Frosting Ever

Even if you’re a “fake it, don’t make it” kind of person, homemade frosting is an easy way to add a special touch to your desserts (even if the rest of it came out of a box).

Over the past few years I have started to work on my own frosting recipe. It took a bit of trial and error, and a few dozen ruined cupcakes, but I think I’ve perfected the formula…mainly because all my friends demand them anytime an occasion comes up that may warrant a batch of cupcakes. More importantly it’s easy to whip up and I’d love to share it with you guys.

Just mix all of these ingredients together with an electric stand or hand mixer, and voila…

Nest Caitlin’s Butter Cream Frosting

5 1/2 cups confectioner’s sugar
6 tablespoons butter
1 tablespoon water
1 teaspoon pure vanilla extract
2 egg whites

My husband and I often team up to create our own recipes (like last night's baked ziti from scratch).  It all started when we wanted to replicate Starbucks' pumpkin loaf, which we finally got right on the fifth try I think.  Speaking of which, it's time we dust that one off...

WELLLLL I don't mean to make everyone on TheNest.com insanely jealous but I am Caitlin's BFFHSAB (Best friend From High School And Beyond) and I have experienced the dinstict pleasure that is Caitlin's cupcakes, more importantly, her frosting. Let me just say, few things have ever tasted better...save only NestCaitlin's pasta sauce (which I'm told will be featured in a later blog). This frosting is enough to make you have a momentary (or all evening) lapse in weight-watching-judgment as it is so delicious, the cupcake itsself is practically superfluous. The sprinkles are merely accessories to the main show...the butter cream frosting. Please don't just take my word for it, try it for yourselves. I implore you...oh yea and HAWD (Have A Wonderful Day). ;)
