Use them in place of apples in a pie - put sugar cinamon and lemon juice in a crust and cove with crust and bake. To fry them - slice and use an egg mixture then dip in cornmeal, salt, pepper,anyother seasonings (paprika, garlic, sugar, etc). brown paper bag? Seriously just put them in a brown paperbag near a window or at room temp. If they're that green though, they won't turn red. Any redness to them they will. yummy in salsa too or if therer are too many - mulch for next year
