I wanted to make cinnamon rolls for DH before work, as a surpise for him. The only issue is, I go to the gym at 6 am, and then go straight to work after that, so I would have to make them around 5:00. He doesn't get up until around 8:30. How can I keep them warm after I cook them? I am not comfortable with leaving the oven on (worried that he might forget to turn it off before he goes to work).

Any suggestions? TIA!

Horseradish Refrigerator Pickles

Anybody have an easy refrigerator pickle recipe using horseradish? I used to buy him tuna packets, and he would make tuna salad sandwiches for lunch. Then he got sick of tuna, so I bought him canned soup, but he won't eat canned soup without rice, and I don't want to/forget to cook rice every night for him to take to work the next day. He doesn't like PB&J and doesn't want me to buy lunch meat/cheese for sandwiches.

Sometimes we do have leftovers from dinner, and he will take that, but a lot of the time, we don't have leftovers. Like, when we make burgers, or have tacos, or I make a stir fry.

Another thing that bugs me, is sometimes he WILL pack a lunch, but then I will find out later that he didn't even eat it! He will go out to lunch if he doesn't "feel like" eating what he packed, or sometimes his boss will buy everyone lunch. He won't eat leftovers after 1 day. So this food that was perfectly fine to eat will just get thrown away.

For the last few weeks I have been leaving cash for him for lunch, but that is at least $7 a day and is really impacting our grocery budget (do you know how much ground beef I can get for 7 dollars?!).

Any help would be appreciated. My sister says I need to just stop helping him figure out what he has for lunch every day...

Blog Updates 5/17

Orange Chocolate Chip Muffins

Easy Easy side dish

Made this tonight. Served it with a simple Spicy Shake n Bake mix on chicken cutlets and peas. It was yummy and a nice twist on plain rice.

Easy Mexican Salsa Rice

Ingredients:

2 cups instant brown rice

2 cups water

1 envelope enchilada sauce mix (or you could use taco seasoning)- i used taco

1 cup salsa (I used mild - go as hot as you want!)

1 (4 oz) can green chilis

Directions:

Combine all ingredients together in a microwaveable bowl. Microwave on
high for 8-9 minutes, or until rice is tender. Let sit for 3-5 minutes
