Oh, that really sucks. You're such a trooper! My blog has a low-fat twist, but it's pretty new and doesn't have much on there. But, I recommend these meats as low fat, high protein sources:
- chicken breasts
- 93% or 99% fat free ground turkey (the 99% tends to taste like carboard, but you gotta do what you gotta do, right?)
- pork tenderloin
- beef tenderloin
- bison steaks
You can probably just take any recipe and substitute the leaner meat for whatever meat is in the recipe ... e.g., low fat turkey burgers instead of bacon cheeseburgers.
And, as a rule whenever I'm restricting my fat, I cut out anything involving cheese
I recommend Cook's Illustrated's Best Light Recipe cookbook. I love it and my last blog post has a marinade from the book.
