Share your favorite low fat recipe...please!

I found out this weekend I have something called Cholecystitis which is severe inflamation of the gallbladder, and requires the gallbladder to be removed immediatly. However, since I'm 30 wks pregnant they can't do anything until I give birth, and just told me to go on a super low fat diet to help decrease the pain and swelling. Problem is, I seriously have no idea how to cook low fat foods. We're normally bacon cheeseburger, wings, potato salad kind of people. The only low fat stuff I've ever tried usually tastes like cardboard. So I'm hoping you all can help. Please send your tasty low fat recipes my way! Thanks!

In my blog (link in siggy) I have a light tag and a Weight Watchers tag. Both of those tags have lower fat recipes.

Oh, that really sucks. You're such a trooper! My blog has a low-fat twist, but it's pretty new and doesn't have much on there. But, I recommend these meats as low fat, high protein sources:

  • chicken breasts
  • 93% or 99% fat free ground turkey (the 99% tends to taste like carboard, but you gotta do what you gotta do, right?)
  • pork tenderloin
  • beef tenderloin
  • bison steaks

You can probably just take any recipe and substitute the leaner meat for whatever meat is in the recipe ... e.g., low fat turkey burgers instead of bacon cheeseburgers.

And, as a rule whenever I'm restricting my fat, I cut out anything involving cheese Crying  I recommend Cook's Illustrated's Best Light Recipe cookbook. I love it and my last blog post has a marinade from the book.

everything in my blog (with the exception of the coffee cake!) is either low fat or, at the very least, a lower fat alternative to a high fat food.

My blog is just getting started but I have some tips in there and my first recipe.  Will be adding stuffed green pepper soup soon.  Try grilling some chicken breasts and adding a bit of BBQ sauce.  That's always a good option.

Do you buy skim milk and non-fat yogurt?  Fresh fruits and veggies are always good.
