What kind of meat are you going to buy?  Are you wanting a vegetable dish or beans?

This is a really simple one I did the other day.

I took the great northern/limas soaked them for about an hour.  I placed them in the crockpot with onions and instead of putting water in the pot, I used beef broth (2 cans) and one veggie broth, salt, pepper and about 2 tbsp of EVOO.  Now you can frozen mixed veggies, but I'd do that after they've cooked down.

If you wanted to do meat:  take chicken breasts, black beans, diced tomatoes, onions and corn.  Place all of the other ingrediants in first, then add the chicken last.  Salt & pepper.  Really good, really simple.
