Making dinner rolls for a wedding...

I am helping a friend out and making some dinner rolls for her daughters wedding next Saturday.  At first her count was 50 people and now it's up to 100.  I am kinda wondering how I am going to be able to get them all baked and to her in time for the wedding.  I do have to work until 11:30 Saturday morning so I think I will have to make them throughout the week.  The best course of action I can think of is to bake them and then freeze them, then all she would have to do is let them thaw and warm them in the oven. 

Does that sound like the most logical plan?  I do not typically freeze my bread so I am just wondering how they will thaw and if they will be fresh tasting.

Does anyone have a recipe for whole wheat rolls?

I've never frozen rolls, but I would imagine it would work, you can buy them like that.

I'm not an expert on freezing rolls, but I generally don't love bread that's been frozen. I'm probably in the minority, though.

Could you shape them into rolls then freeze them, and bake on Saturday before the wedding?

I freeze french bread all the time, because there is just too much for us 2 to finish. Then when im ready to use it i thaw it in the fridge while at work and pop it in the oven. I can't see why that wouldn't work for rolls. But to be honest I would do a test batch if you have time.

 I love the honey yeast rolls and I make them with half whole wheat and half regular flour. Don't know if that helps you but here is an example of when I did that. http://bigcitycooking.blogspot.com/2009/04/bunny-bread.html
