Anyone have a delicious risotto recipe?

I want to make risotto! With chicken.  I'm allergic to mushrooms.

 Any ideas? tried & true? Thanks! My first time making risotto btw!

It doesn't have chicken, but this is the best risotto in the entire world.

To the PP, I only said chicken because I was thinking protein, but the nutrition facts you posted lists a good amount! awesome.  Ques - did you really make your own chicken stock?

I did - but I had some in the freezer since a couple weeks back I wanted soup and didn't have any on hand, so I made a batch and had it in the freezer.

 

I'm sure however that you could use store bought stock!

I always use this basic risotto recipe, http://www.foodnetwork.com/recipes/sara-moulton/basic-risotto-and-several-variations-recipe/index.html. However, instead of using a whole onion, I use half an onion as well as a shallot to add some more flavor. I also throw in a little garlic too. Also to mix it up you can replace the white wine with red wine for a different taste.

Once you have a good basic risotto recipe down, you can really add ANYTHING you want to it. I'll be updating my blog tomorrow with a roasted beet and gorgonzola cheese risotto I made over the weekend that was delicious. Stay tuned!
