Sides & apps with ribs

My parents are making ribs tomorrow and I offered to make the sides and an app or two. Ideas?

My mom isn't into anything too fancy or foodie - I mentioned caprese stacks on top of polenta but she said no! Darn.

Ideas so far:

Joelen's provencal tomatoes

Wagon wheel pasta salad

Baked beans

??

How about citrus rice? I made this recipe recently and it was delicious. Also, it can be served warm or room temp.

And then maybe some grilled veggies as well? Chopped grilled veggie salad with black beans?

Mmm ribs....

I always think baked beans, cole slaw and green beans when I have ribs.

Could you do some sort of green bean side?  I don't know if you've ever been to a Texas Roadhouse but they have a super yummy green bean side.  It's so basic, but heavenly.  Basically just green beans in a little bit of chicken broth with bacon and onions.  DELISH.

I'm not sure if that's exactly what's in it, but that's what it tastes like :)

How about garlic bread and potato salad? Or a nice corn salad?

Yummy without being "weird."

We are also having ribs & pulled pork.

We are having: corn on the cob, cole slaw, baked potatoes, mac & cheese, deviled eggs, baked beans

Green beans would be yummy!

Hmm, my mom does love a cold green bean salad. Maybe I'll do that. But the dish you described sounds delish!!

When I make green beans, I do 1 lb of green beans, 1/4 c. chicken broth, about 2 tbsp of butter, 1/8 tsp. garlic powder, 1/4 tsp. pepper, and 1/2 tsp. salt, 1/4 c. of onions, and 1/4 of cooked bacon, and just simmer it all together. It's delicious! DH loves it, and he says it tastes just like Texas Roadhouse! :)

We're having ribs tomorrow, too.
For sides, we're having slaw, corn, potato salad, and baked beans.
