A good cold side dish

What is a good bbq side dish that is cold (like, along the lines of potato salad) that does not contain mayo?  DH hates all things mayo/sour cream/cream cheese related and i want to make sure there will be an option for him at a 4th cookout.  We will already have a green salad as well.

Pasta salad, a lot of pasta salad recipes don't have mayo in them.

Ditto.  I've done a pasta salad with 1 box angel hair pasta, chopped veggies (bell pepper, red onion, tomato, cucumber, etc) and 1 small bottle Italian dressing. Oh, and salt & pepper.

Suddenly Salad! Easy, various flavors that don't use mayo (classic and caesar I think) and yummy! I found double-packs for $1.96 at Walmart last week - that's less than I normally spend on a single box! You can make the pasta earlier in the day and mix the dressing, keep them separate until it gets close to time to eat! We like to mix fresh diced tomatoes in too. Mmmmmm makes me hungry...

I also do a cold salad of black beans, corn, tomatoes, red bell peppers and mix in pico de gallo or rotel so it's spicy.

I do blanched green beans w/ chopped cherry tomatoes and shallots and add Brianna's French Vinagrette. The key is to not over cook the green beans they just need to be tender crisp. I buy the fresh haricot vert, but you can use any you like.

Since I got food poisoning at a church potluck last year I avoid all mayo dishes at big gatherings, especially outdoor ones!

Three bean salad is a great choice. This is the one I made last week and liked. Might be too sweet for some, start with less sugar and add to taste.

Ingredients
  1 (15 ounce) can green beans
1 pound wax beans
1 (15 ounce) can kidney beans, drained and rinsed
1 onion, sliced into thin rings
3/4 cup white sugar
2/3 cup distilled white vinegar
1/3 cup vegetable oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon celery seed
Directions
  1. Mix together green beans, wax beans, kidney beans, onion, sugar, vinegar, vegetable oil, salt, pepper, and celery seed. Let set in refrigerator for at least 12 hours.

 

Instead of celery seed I add one stalk of celery finely chopped. 

You can also make asian coleslaw which has a vinegar dressing (or buy it from HEB, very good)

I found a potato side dish on the recipe page of the Nest.  I've actually found several recipes which were simple enough for me (the non-cook) to pull off fairly well.

I really like Ranch Style Bean Salad, but with catalina dressing--here's a recipe of it I found on-line.  I always use fritos, never heard of plain doritos before...

CATALINA SALAD  
1 lb cooked ground beef
1 lb grated sharp cheddar
1 (15 oz.) can ranch style beans, drained
1 large head of lettuce, torn into bite-size pieces
1 can chopped or sliced black olives
1 large onion, chopped
1 (7 oz) pkg plain/flavored Doritos or Fritos
1 bottle Catalina salad dressing
Combine all ingredients except chips and dressing.

Chill, covered in refrigerator until needed.

At serving time, toss with slightly broken chips and dressing.

I make this a lot and it's always a hit.

  • 1 pkg. cole slaw mix
  • 1 pkg. Ramen noodles, crumbled
  • 1 cup sunflower seeds
  • 1 cup almonds slivers
Dressing:
  • 1/2 cup sugar
  • 1/2 cup oil
  • 1/3 cup red wine vinegar
  •  flavor packet from noodles

Mix slaw, noodles, sunflower seeds, and almonds. Mix sugar, oil, and vinegar; pour over slaw mixture.
