Birthday cake (for my mom - yellow w/cream cheese icing)

Chips with sausage queso, salsa, and homemade pico de gallo

Burgers

Slow-cooked pinto beans

Fruit salad

Gooey butter cake

I love a party--and find it hard to hold myself back from making WAY too much food! :)  I think we've settled on this menu:
 
Marinated chicken & steak
Deviled Eggs
Stuffed Mushrooms
Olive & Fig Tapenade
Citrus Whip with Brownie "chips" & fruit
Strawberry Champagne Spritzer 
 
Guests are bringing: 6 Layer Dip; Buffalo Chicken Dip
I'm hoping others will sign up for the usual mac/potato salad, beans, etc.

There are tons of different recipes for Cowboy Caviar, here is mine:

  • 1 (15.5 ounce) can black beans, drained
  • 1 (15.5 ounce) can black-eyed peas, drained
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 can of Rotel original, drained
  • 2 cups can whole kernel corn
  • 1/2 medium sweet onion, chopped
  • 1/4 green bell pepper, finely chopped
  • 1/2 cup Italian salad dressing
  • 3/4 cup chopped cilantro
  • 1/2 teaspoon garlic salt

Directions: 

Mix beans, peas, tomatoes, rotel, corn, onion, bell pepper, in a large bowl. Season with garlic salt. Add dressing and cilantro; toss to coat. Refrigerate for for at least an hour or 2.  I usually put it in the fridge overnight.  You can also add 1 or 2 diced avacados, I don't, because no one in my family, but myself, likes avacado.  :(

The recipe can be easily doubled and can be altered easily with other things, such as jalapeno's, black olives, avacado, etc.

Serve with Tostito Scoops

We are feasting on:

4 different kinds of sausage (from our local market-Reading Terminal) along with red and yellow peppers with onions

couscous-garlic and parm cheese

fruit salad

homemade oatmeal chocolate chunk cranberry cookies

ice cream

one of our friends always brings cheese and crackers, yummy!
