Lower carb lunch ideas

I'm considering doing the South Beach Diet, not necessarily to lose weight (though that would be a plus), but to help with PCOS symptoms.  I'm definitely a carb lover, so this is going to pretty tough for me.

Anyone have any suggestions for lunches to take to work?

Oh and I should mention that I can't eat salads.

I think tysons makes them but they have frozen chicken breasts that are already seasoned and just need to be popped into the microwave for two mins.. i eat those and then they now make single serving veggies that you cook in the microwave and they are really yummy. They also taste fresh to me after cooked.

I have been trying to do low carb as well.  Not as a diet but just because I think I was eating too many of them.  It's hard to find low carb lunches that are quick.

Good luck!

I sometimes get these meals (actually I buy them whenever I see them, because they're yummy). They are boxed meals, I think the brand is South Beach Living or something like that. They go in the fridge, not the freezer. Anyway, the one I always get is the southwestern chicken wraps. You get two whole-wheat tortillas, some chicken breast, cheese, and salsa. Make your wraps and microwave for about 30 seconds. Pretty tasty! They also include a little Jello thing (yuck) but I don't hold it against them.

stuffed peppers or tomatoes

egg/chicken salad on endive leaves

soups, lots of kinds. I made a yummy turkey and kale soup that is really good and pretty much no carb.

Thanks ladies!  Looks like I'll be making lots of soup (I really prefer warm meals for lunch, they seem more feeling for some reason!).
