Brunch ideas please!!

I need your brunch ideas ladies! I am going to a cabin for the weekend with my ILs.DH and I are in charge of brunch Saturday. I need something that's easy to make, will feed 8, and not french toast related. (we're having that sun.) So give me your main dish and side suggestions! thanks!

Under eggs in my blog there is a great egg casserole, and also a quiche with summer veggies that I have been making non-stop this summer.

Quick Quiche

SUBMITTED BY: myrite

INGREDIENTS 

  • 8 slices bacon
  • 4 ounces shredded Swiss cheese
  • 2 tablespoons butter, melted
  • 4 eggs, beaten
  • 1/4 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk

DIRECTIONS

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
  3. Line bottom of pie plate with cheese and crumbled bacon. Combine eggs, butter, onion, salt, flour and milk; whisk together until smooth; pour into pie pan.
  4. Bake in preheated oven for 35 minutes, until set. Serve hot or cold.

Go to the Food Network website.  And search "Giada" and "Frittata"  I have the recipe printed.  It has prosciutto, as I remember.  YUMMY.

I love a good strata because you prepare it the night before and just bake it off in the morning. I have a sausage and cheese strata recipe that I always make at Christmas and I also have an Everyday Food one bookmarked that's got Canadian bacon and English muffins.

Strata is a great idea and as long as everyone likes Thanksgiving stuffing, you know they will eat it.  I also like making scrambled eggs served over toasted baguette slices with steamed leeks tossed in just a drizzle of heavy cream.  Yummy!  I'm not really a sweet tooth in the morning so I prefer breakfasts with eggs.  A frittata is also a great way to feed a crowd.

If you don't want to do eggs, a nice selection of muffins or quickbreads and scones is usually a crowd pleaser as well.
