I'm a little late, so I hope you still see this! This is one of ours favs:
Slow-Cooker Salsa Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup of your favorite salsa
1 package taco seasoning (I use low sodium)
1 can cream of mushroom soup (I use low fat)
1/2 cup sour cream (I used low fat)
Directions:
Add chicken to slow cooker. Sprinkle with taco seasoning. Pour salsa and soup over chicken. Cook on low for 6-8 hours. Remove from slow-cooker and shred. Stir in sour cream. Serve with rice and beans. (I also like to eat it rolled up in tortillas)
