Hashbrown Casserole

Does anyone have a recipe for this in their blog, that does not include the Cream of Chicken/Mushroom soup? That is all I keep finding online.

Here's how I make it: I made hashbrowns the regular way (not all the way crisp) cut up some veggies (onions, bell peppers), added cooked bacon and sausage, combined it in a casserole dish, sprinkled a little cheddar on top and baked until cheese was melted and it was hot all the way through. DH loved it and we topped it with salsa...

My mom's recipe:

Melt together:

  • 1 pound of velveeta
  • 1 stick of butter
  • 2 cups of half & half (I often use buttermilk instead)

Pour over 1 bag of hash brown potatoes (cubed, not shredded) in a 9 x 13 pan.  Cover and bake at 350 for 30 minutes, stir, bake uncovered 30 minutes.

That sounds really good! Do you remember how hot you set your oven? This is probably going to have to happen in my kitchen very soon... :)

I want to say 350 degrees. I kind of made it up as I went lol, so I think 350 and it really only heated for about 15 minutes....
