So, it's getting to be that time of the year when I love to use my crock pot. It's so nice to come home from work/class and have a meal waiting! Anyone have some good recipes or books they would like to share?
Here's a recipe I made last night:
Creamy Black Bean Salsa Chickenfrom 101 More Things to Do with a Slow Cooker by Stephanie Ashcraft2-4 boneless, skinless chicken breasts1 c chicken broth1 c salsa1 can (15 oz) corn, drained1 can (15 oz) black beans, drained1 pkg taco seasoning½ c sour cream1 c grated cheddar cheesePlace chicken in greased 3.5-5 qt slow cooker. Pour broth, salsa, corn, beans and taco seasoning over chicken. Cover and cook on low for 6-7 hours or high for 3-4 hours.Remove chicken and place on serving dish. Stir sour cream and cheese into sauce, then pour over chicken. Makes 3-5 servings. Serve with warm tortillas and Spanish rice.
The book listed is a WONDERFUL crock pot book. It uses common ingredients that you usually have around the house which I really like. Enjoy!

on the clearance table at my local bookstore and I love it! I have made thai chicken and beef short ribs (and the soups the next day) and everything was YUMMY!
