Here is my recipe:
Meatballs
1 1/5 lbs. ground pork
1/2 lb. ground beef (can use any proportion you like, but use about 2 lbs of meat. For my meatballs I used about 3/4 lb. of pork, 3/4 lb. of beef and 1/2 lb. of veal)
1 small onion chopped
1 c. plain breadcrumbs
2 eggs beaten
Season with salt, pepper and garlic salt to taste
Mix the above ingredients together (by hand works the best) and form into balls. Place in a 9x13 inch baking pan and brown in the oven at 350 degrees for about 30 minutes, turning once. After 30 minutes, pour about a 1/2 c. red wine over the meatballs and let cook another 10 minutes. Remove the meatballs and simmer in the spaghetti sauce for a couple of hours.
Spaghetti Sauce
1 small onion, chopped
2-3 cloves garlic, minced
2 large (32 oz. cans tomato sauce)
32 oz. can crushed tomatoes
1 can tomato paste
1 tsp. sugar
Saute onion and garlic in olive oil, then add tomatoes, sugar and a little water (from rinsing out the tomato cans). Season sauce with basil, garlic salt, parsley, rosemary (use sparingly) and a dash of cayenne pepper. Simmer over low heat for about 2 hours or so. Turn the heat off and add fresh basil to finish the sauce.
