Need to "oneup" my MIL..HELP!

I just recieved a phone call from DH's aunt and was asked to make a casserole for Thanksgiving dinner. My MIL always makes a broccoli cheese one and I want to "out-do" her this year. (she is competitive with me when it comes to cooking) and (she is in the process of moving and won't be able to cook this year)

So ladies, lay it on me! What is a fabulous casserole that will WOW the fam? It CAN NOT be green bean casserole, someone is already bringing that!

what about a hashbrown potato casserole? MIL always makes this and it's fantastic...it's the only dish without leftovers!

Au Gratin Potato Casserole

Gratin-potato-sl-1120169-l

Yield: Makes 10 to 12 servings

Ingredients

  • 1  (32-ounce) package frozen Southern-style hash browns
  • 1  (16-ounce) container sour cream
  • 2  cups  (8 ounces) shredded Cheddar cheese
  • 1  (10 3/4-ounce) can cream of mushroom soup
  • 1  small onion, finely chopped
  • 1/4 teaspoon pepper
  • 2  cups  crushed cornflakes cereal
  • 1/4  cup  melted butter

Make it

Stir together first 6 ingredients in a large bowl.

Spoon potato mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle evenly with crushed cornflakes, and drizzle evenly with butter.

Bake at 325° for 1 hour and 20 minutes or until bubbly.

Note: For testing purposes only, we used Ore-Ida Southern Style Hash Browns.

After reading the reviews, I'm going to add some garlic and swap the cornflakes for Ritz crackers.  I'm also going to swap the cream of mushroom for cream of chicken because some friends don't care for mushrooms.  What casseroles are you cooking up for Thanksgiving?  Send me a link!

Casseroles in general aren't very elegant, IMO, but I saw a recipe for sweet potato and orange casserole on Regis & Kelly that looked really good.  Joy (Regis' wife) supposedly makes it every year for their Thanksiving.

Oh dear.  These one up-man-ship situations never go well.  It's hard to enjoy Thanksgiving dinner, whether you're "competing" or just watching the competitors.  I hate feeling like I have to modulate my praise of something on the table that tastes good, or praise something that's 'meh' because I know two women are duking it over over cooking skillz.

I have some seriously competitive cooks in my/DH's family, and my suggestion based on that experience is to NOT try to out-do each other, but rather develop specialties and try to avoid stepping on each others' toes.  My SIL makes great pies and appetizers.  I don't even try at those things, but I make awesome birthday cakes, cookies, and margaritas.  My MIL makes great casseroles and dinner standards. Together we can throw a hell of a multi-course party, and nobody gets bent out of shape.

No, wouldn't do more potatoes.  I'd pick a vegetable (green bean casserole?), or at least something totally different if you're staying with starches.  I actually brought a 4-cheese mac & cheese to Easter with my ILs last year that went over well.  I'm usually not a huge casserole fan, though.  Can you expand out to general vegetable dishes?  Some kind of asparagus dish would be a nice addition...

If you weren't already making tons of potatoes, I'd say this. We use dried onion, cheese whiz and cream of chicken soup and we have to make at least 2 pans because it goes so fast.

Instead of a sweet potato casserole I make a butternut squash casserole every year.  It's delicious!  You can sub Grand Marnier for the orange extract if you wish.

Super easy, relatively inexpensive, easy to multiply...

Best Crockpot Corn Ever (as named by consumers)

1lb of frozen corn kernals

6oz of cream cheese

1 stick of butter

1 tbl of salt

1 tbl of sugar

But everything into the crockpot and set on high for two hours, stirring occasionally. I add 30 to 45 minutes to each extra recipe I make.

This is a great casserole, I made it the first year I went home for Thanksgiving after graduating college and I made this and my mom and aunt made everything else, we had about 20 people over to the house... everyone RAVED about this and kept asking my mom/aunt which of them made and and could they get the recipe... and they both took credit, Iol... I just kept my mouth shut, but it has been a staple ever since... kind of similar to southern style cornbread dressing, but REALLY great.
