What to do? TONS of jalapenos!

I'll never be able to use them all before they go bad.  Are there any sauces I can make that will freeze well?  I'm looking on line, but nothing is striking my fancy.  Yeah, that's right, I said "striking my fancy"!

Another good question!  I have about 50 jalapenos growing right now and will be ready in a couple weeks!  I was wondering about freezing them....?

Jalapeno mac and cheese?

Pepper jelly

 Freeze 'em.

 Or, dry, toast and grind 'em to make jalapeno powder, or to use in a rub. I think you have to oven-dry jalapenos (at a really low temp) b/c they're so plump--probably need to slice 'em in half to dry. (Dried chipotles are smoked jalapenos; can you smoke the peppers? Do you have big enough rolling papers? hahaha. Kidding.)

Nice, Faye!  I hadn't thought of making pepper jelly!  I've never made jelly before and I'd love to try.  Pepper jelly on melted brie...yyyuuuuuummm...

I froze a lot of sorrano peppers from my garden by putting them in the food processor and chopping roughly.  Then I put about a Tbs in each secton of an ice cube tray and topped with chicken broth.  To use, you can either add the whole cube to soups or chilis, etc. Or, you can run it under water in a small strainer to get rid of the broth and use as you would fresh.  I've used some of the ones I froze and it worked out great! (you can see them at the end of this post)

Know it's a "fresh" jalapenos idea but I just recently made a huge batch of pico de gallo for the first time and my H & I loved it...very handy for quick nachos!

I have the same problem.  I keep saying I am going to make jalapeno poppers but haven't yet.
