I haven't made rolls, but I am doing this with biscuits. I am making the dough beforehand, rolling it out, cutting the biscuits, and freezing them unbaked. The day of I just have to put some egg wash and bake them in the oven.
Don't know if the same applies to rolls, hopefully someone else helps!
