A really good and easy travels/well can eat with your hands standing up breakfast thing I make are these mini quiches.
Get Pillsbury biscuit dough in the cardboard tube that pops open. Grease a muffin pan and flatten and use 1/2 a biscuit worth of dough to line each muffin tin. In a bowl mix up some eggs, a little milk and some spices to your taste (I usually use cumin, black pepper, and a little cayenne). Pour a spoonful of egg mixture into the dough cups. Don't use too much or they overflow because the dough puffs up quite a bit. Make them maybe half full. Sprinkle in a few diced peppers, tomatoes, or green chilis, or crumbled sausage... whatever sound good to you. Top off with a large pinch of shredded cheese. Bake at 350 until golden. I think it's like 20 minutes, but sorry, I don't have the recipe in front of me for the exact time.
I've taken these camping and have served them at potluck brunches before and people loved them.
