I just got into using mine and I went to the local library and got some cookbooks dedicated to slow cookers and they are wonderful!  Yesterday I wanted to make chicken broth so I threw in a small roaster chicken, 1 onion cut up, 2 carrots, 2 celery sticks, peppercorns and thyme (and filled the whole thing with water).  Let it cook on high for 7 hours.  I shredded the chicken and made chicken and noodles and froze the rest of the broth for soup at a later date.

Crock-pot Lasagna

 

Ingredients:
1 lb. ground beef
1 onion, finely chopped
2 garlic cloves, minced
1 large jar spaghetti sauce
1 (8 oz.) package no-boil lasagna noodles
16 oz. mozzarella cheese, shredded
1 lb. ricotta cheese
¼ cup milk
1 egg
½ cup parmesan cheese
salt and pepper

Directions:
In a large skillet, brown beef, onion and garlic. Drain off any grease. Add the spaghetti sauce and mix well.

 

In a separate bowl, mix the ricotta, milk and egg. Beat until mixed well and smooth. Then add the mozzarella and parmesan and mix until well combined.

Grease the crock-pot with vegetable shortening in the bottom and sides.

Put about ¼ of the meat the sauce in the bottom of the crock-pot. Put a layer of noodles of top of that (break them if needed) Then put 1/3 of he cheese mixture on top of that. Repeat with the sauce, noodles and cheese for another 2 layers. Top with meat sauce. Cook on low for 4-6 hours or until noodles are tender

My favorite is to place sweet italian sausage (large links, whole)  in the crockpot with medium red and green peppers (from a jar with sauce).  We eat the sausage and peppers on hoaggie buns.

Carnitas a la crockpot

Ingredients:
2 lb. pork roast
cumin
oregano
chili powder
cayenne powder
salt and pepper
5 cloves garlic, peeled and whole
1 cup tomatillo salsa
1 onion, diced
a little oil
cooking spray

Directions:
Spray the bowl of the crock-pot with some cooking oil.

Cook the diced onions in the oil until they are translucent. Add the tomatillo salsa in and stir to combine

Meanwhile, season the roast. Season liberally with salt, pepper, chili powder, cumin, oregano and cayenne (well not too liberally with that if you don't like spicier foods :) on both sides. On the top, cut 5 slits or Xs into the roast and insert the whole cloves of garlic in the slits.

Sear the roast to brown on all sides before putting it into the crock-pot. Pour tomatillo mixture over the roast.

Cook on low for about 8 hours or on high for, I would guess about 4. Shred the meat with two forks and continue to cook for about 30 minutes with the lid off, to thicken the salsa a bit. Remove the garlic cloves and stir in the cilantro.

Use to fill tacos/burritos/enchiladas or just eat with some beans and rice.

Slow Cooker Pulled Pork

 

Ingredients:
2 lbs. pork tenderloin
12 oz. root beer
18 oz. barbeque sauce

Black pepper, to taste

8 hamburger buns

 

Directions:
Place the pork in a slow cooker; pour the root beer over the pork. Cover and cook on low for 6-7 hours or until pork shreds easily. Drain well, shred and stir in barbeque sauce and pepper. Serve on hamburger buns. Yield: 8 servings

Crock-pot Pork with Fruit

 

Ingredients:
1 medium onion, sliced
1 boneless pork loin roast (about 2 lbs)
1 (8 oz) package dried pears or dried plums (1 ½ cups)
½ cup apple juice or cider
½ tsp. salt

¼ tsp. ground nutmeg

½ tsp. ground cinnamon

Directions:
In a 4-5 quart crock-pot, place onion. Place pork on top of the onion and top with fruit. In a small bowl, mix remaining ingredients and pour over fruit. Cover and cook on low for 7-9 hours or until pork is tender. Serve fruit mixture over pork.

Crock-pot Bacon and Cheese Chicken

Ingredients:
3-4 chicken breasts
12 pieces cooked and crumbled bacon (or less)
1/4 cup teriyaki sauce
1/2 cup fat free Ranch salad dressing
1 cup shredded cheddar cheese

Directions:
Place the chicken in the crock-pot. In a small bowl, combine the teriyaki sauce and the ranch dressing. Pour sauce over the top of the chicken. Add the shredded cheese and the crumbled bacon to the crock-pot, getting between the chicken pieces, if you can. Cover and cook on low for 6-8 hours, or on high for 3-4.

Crock-pot Beef Stew

Ingredients:
1.5 pounds stew meat
2 Tbsp. flour
¼ C. vegetable oil
5-6 medium red potatoes, cut into 1’’ chunks
2 cups baby carrots, cut into fourths
3 garlic cloves, minced
1 onion, chopped
14.5 oz can green beans
29 oz. can diced tomatoes
30 oz. beef broth
1 packet McCormick beef stew seasoning

Directions:
Toss stew meat in flour to coat. Heat oil in pan on med/high heat and add meat. When meat is slightly brown on the outside, remove pan from stove. In your crock-pot combine meat with all the remaining ingredients. Stir to combine. Cook on low for 6-8 hours.
