What to do with 1 Avocado?

So, I made some guacamole over the weekend but have 1 avocado left.  I'd rather not make more guacamole and the avocado is perfectly fresh for today or tomorrow.  Any ideas?  Thanks.

they're great sliced thin on turkey or chicken sandwiches or wraps. they're also excellent cut up with mango in a salad with a bit of fresh basil thrown in.

I would just cut it in half, remove the pit, pour in a little soy sauce, and enjoy.

Last night I diced half of one into a salad and saved the rest to mash up for sandwich spread.

It is AMAZING on a BLT.

And a healthy sub for mayonnaise on any sandwich, yes.

I second the BLT suggestion, as well as any sandwich/wrap with turkey or chicken.  You could also top a mexican burger or add to a quinoa or pasta salad.

Or, you could make this: Grilled Chicken with Green Chili, Tomatillo, and Avocado Sauce

So yummy!

I have the same problem as well.

I'm using it for tacos tonight (I also have a mango so probably will make some sort of mango/avocado salsa) but otherwise I would throw it in a salad - I really like citrus fruit paired with avocado.

I say sandwich, too.  My favorite is bacon, tomato (awesome with a sweet heirloom) & avocado on slightly toasted bread.

I'm late to the post, but I just read in the Sneaky Chef books that you can put 1/4 an avocado in fruit smoothies. It doesn't affect the taste or color, just adds nutrients. I made a bunch of smoothies to freeze yesterday with the avocado added and had the whole family taste test. No one knew! If you google Sneaky Chef's Sinless Smoothies you might be able to find the whole recipe.
