BEEF!!!

So, long story short, I got in trouble with my doctor for not eating enough red meat. My iron levels were like a vegetarian's.. which is not good because (1) I am not a vegetarian, (2) I have never been a vegetarian, and (3) I am not allowed to be a vegetarian because of my ultra-low hormones.

So she said NO chicken and NO fish for at least a month... So I was looking through my recipe book over the weekend and realized that half of the recipes are for chicken, and half of them are meatless... Woops!

I am really horrible at making steaks and burgers... I just don't have that gift. So, what are some really good, and really hard to mess-up beef recipes you have? I am willing to try anything once.

Um I'm a lurker here that eats a lot of beef. my husband and his brother like to split a grass fed beef cow about once a year.

im a lurker too,but  I have a bunch of meat recipes for you. Im a red meat lover and I get really tired of chicken

This  recipe is easy for the winter since the summer grilling season is over (at least in NY).  I usually just use a regular london broil for the recipe and then serve it over egg noodles.

Also beef stew is good too this time of year. The recipe says to cook over night, no need.  You can mix ingredients the night before or that morning and then cook on low 8-10 hours.

Another one-Super easy Pot Roast
Decent size rump roast
1 can coke/pepsi
1 package onion soup mix.
Put in crockpot and cook 8-9 hours on low.  DELICIOUS.  You can also through some carrots in here too for veggies.

 Here is a noncrockpot/pasta one! This is a huge hit in our house.

Creamy Taco Mac
Ingredients:
1¼ lbs. ground beef
8 oz. dry pasta shapes
1 small onion, chopped
1 clove garlic, minced
1 (14 oz.) can diced tomatoes, drained
4 tbsp. taco seasoning
3 oz. cream cheese
½ cup sour cream
Salt and pepper
Shredded cheddar cheese (optional)

Directions:
Bring a large pot of water to boil. Cook pasta according to the package directions. Drain, reserving ½ cup of pasta water. Set aside.

Meanwhile, in a large skillet or sauté pan, cook the ground turkey over medium-high heat until no longer pink. A few minutes before the turkey is cooked through, add the chopped onion to the skillet. Once the turkey is cooked through, mix in the garlic and cook until fragrant, about 30 seconds. Mix in the diced tomatoes and taco seasoning and let simmer over medium heat for about 5 minutes. Stir in the cooked pasta, cream cheese, sour cream and reserved pasta water, and continue stirring until the cream cheese is melted and the sauce is well blended. Season with salt and pepper to taste. Simmer over medium-low heat 3-5 minutes to reduce the sauce a bit. Remove from the heat and top with shredded cheddar cheese, if desired.
