I always get requests for this hot dip, very easy and so good!
Hot Spinach & Roasted Red Pepper Dip
3 tbsp butter, melted
1 tsp minced garlic
1 1/2 cup fresh spinach, washed & stems removed.
1/2 cup roasted red peppers, diced
1-8 ounce pkg cream cheese
2 tbsp milk
1/2 cup grated Parmesan cheese
1/2 tsp red pepper fflakes
salt & pepper to taste
Sauté spinach & garlic in melted butter until spinach is wilted. Add diced roasted red peppers, set aside.
In saucepan combine cream cheese and milk, cook over medium heat until hot & softened.
Stir spinach & roasted red pepper mixture into cream cheese. Add Parmesan cheese, red pepper flakes, salt & pepper.
Contine to mix until well combined and heated through.
Serve with lightly toasted pieces of Italian bread or crackers.
**when using a crock pot to keep the dip hot keep heat on low and stir periodically.
