I've always loved the lightish yellow/maize walls that I often see in pictures of Italian "weathered" kitchens. What I'm refering to is when the walls sometimes have a texture to them?
When we redecorated my now-husband's kitchen (when he was my fiance) he had stucco walls in his kitchen. It would have been a major pain to scrape all that texturing off, so we did it with pale-ish yellow and darker sort of maize-ish brown in a ragging, or sponging technique to look like the walls were aged. It turned out pretty well.
There are tons of booklets you can pick up at the home improvement stores to give you different ideas on techniques you can do that are fairly easy. If you don't like it, just paint over it.
